Pancakes!



Breakfast is one of my favorite meals!
It is also the meal I am most likely to skip! But when there is time I like to sit down to a good breakfast with my family. When I think about memorable breakfasts we have shared the list would have to include:
coffee cake at Grandma & Grandpa's
Christmas morning monkey bread
cheesy egg bake and donuts at "the Pines"
egg mcmuffins and bagels in the car
Uncle Chuck's french toast
Perkins with Grandma
Starbucks in Wisconsin on a road trip
scrambled eggs and rolls at Los Yumbos
late night breakfast at Dennys in Frisco
or pancakes from our own kitchen!

Breakfast is a great meal to prepare together, there are lots of jobs
for everyone to share. Food just tastes better when we're cooking together. One of the easiest breakfasts to make together is pancakes. They are great with just syrup or fabulous with all the extras. There are lots of great pancake mixes you can buy, but most times you have everything on hand that you need to make some great cakes! This is the recipe I have been using for years plus some variations to try. Get busy, it's time for breakfast!


Ethel's Delicious Pancakes (another lady I've never met!)

4eggs
2 cups buttermilk
1/3 cup oil
1 3/4 cups flour
2 teaspoons baking powder
1 teaspoon soda
1 teaspoon salt

In a large bowl (with a pour spout is helpful) whisk up the eggs well. Then add the buttermilk and oil, whisk well. Add the dry ingredients and whisk until smooth. Put a frying pan on medium/high heat, add a drizzle of oil to coat bottom of pan. You'll know it's hot enough when water flicked into the pan "spits". Pour in about 1/2 cup of batter, tilt pan to distribute if needed. Flip the cake when bubbles form on surface of batter. Serve with syrup, sliced berries, bananas, chocolate chips, chopped nuts, granola or whipped cream! Don't forget the sausage or bacon, yum!

Variations:
*If you don't have buttermilk don't panic, regular milk is ok. Or substitute 1 1/4 cup milk mixed with 3/4 cup plain yogurt or sour cream.
*For whole wheat pancakes use 1 cup white flour and 1 cup whole wheat flour.
*For banana pancakes add 1 well mashed banana with the milk and oil.
*Or add 3/4 cup applesauce with cinnamon for apple pancakes!
